Warm Spinach Salad with Salmon
Have you ever had a warm spinach salad before? Um, it's amazing. And oh-so-versatile. If you have a bunch of spinach to use up, this one's for you.
First, make your salmon. You can just a really quick and easy pan fry (skin side down first).
In a small-medium skillet, heat equal parts olive oil and red wine vinegar on low. Add chopped red onion, salt, and pepper. On top of the dressing, add quite a few big handfuls of spinach. Toss continuously with tongs until all the spinach leaves are coated and just starting to get warm and wilt a little. Throw the spinach into a bowl, flake the salmon on top, and serve immediately.
If you like the warm spinach salad thing, you could also try apple slices, bacon, goat cheese, toasted almonds, and/or a hard-boiled egg as other toppings!
