Pesto


Pesto makes pretty much anything taste good. Drizzle over tomatoes and mozzarella, mix into pasta, coat roasted veggies, add to potato salad, drop into soup...and it's actually really easy to make!

First, drag your Cuisinart out of the pantry.

Pesto has a few star main ingredients. You will need lots of fresh basil leaves, washed and dried. Mix in the Cuisinart with a huge lob of good, quality olive oil, a few roughly chopped garlic gloves, a handful of pine nuts, and a generous few shakes of salt.

Blend until smooth. Add more olive oil as needed. The final star ingredient is a few big handfuls of grated Parmesan. Taste and add more salt if needed.

You can store in the fridge for a few days or even freeze in small portions to use throughout the year. Make a huge batch during the summer when the basil is fresh!
