Black Bean Burgers
There is something magical about black bean burgers. They are really delicious and even approved by my very carnivorous husband.
Start with a can of black beans. Drain the beans well, dry them by spreading out over a paper towel (very important to avoid mushy burgers) and pour into a bowl. if you are still getting mushy burgers, you could bake the beans for a few minutes. Then, smash the beans with a fork until they are super smooth. Add chopped onions, an egg, and some kind of "flour" to add substance. I like to smash rolled oats. You can also use panko or just regular flour or bread crumbs (although you wouldn't believe how many weird ingredients are in store-bought bread crumbs--wtf?). Just a spoonful or two will do. Quinoa or brown rice could also work.
Optionally, you can sautee the onions in some olive oil with garlic and salt. Adding chopped mushrooms to the sautee is highly recommended!
If you don't want to use the egg, you will need some kind of "binder." Dialing up the smashed oats could work as long as you add some liquid, like ketchup, balsamic, etc.
The fun part is the flavoring. You will definitely want to add some salt and pepper, but beyond that is up to you. Paprika, garlic powder, cumin, and chili powder are all great choices. I love adding full flavored condiments like balsamic vinegar, mustard, hot sauce (hello Siracha) Worchestershire sauce...or even feta!
You can bake or fry these until they get crispy on the outside. They might be a little too crumbly to grill, but you could certainly try. Serve in a bun, on a salad, smothered in guacamole, cheese or egg on top...
