Chicken Salad
This is another one of my go-to lunch recipes. It's a great way to use two of my other recipes: roasted chicken and tzatziki sauce!
Step 1 is to get some chicken (I usually use chicken breast and tenders for this one). You can either carve the meat right out of your roasted chicken or take a different route by marinating chicken chucks in olive oil, lemon juice, salt, pepper, garlic, and herbs and either baking or grilling.
Once you've got the chicken all cooked, either chop or pull into more bite size pieces. Then, you have two options for the dressing:
Option 1: Greek-ish style. Toss chicken in tzatziki sauce
Option 2: American-ish style. Toss the chicken with diced red onion, celery, and either mayo or Greek yogurt (or a combo). Season with salt, pepper, celery salt, etc. as desired.
Yummy additions for either: chickpeas, chopped kale, sliced tomatoes.
When I bring this to work, it's usually in a Tupperware with green peas and a baked sweet potato. Could also be amazing as a sandwich, in a pita, etc.
