Squished Burrito
Getting enough protein in the morning can be so challenging!
While nursing my son, I had to do a strict elimination diet to figure out what he was allergic to - no eggs, no gluten, no dairy, no soy, no nuts, no sesame - NO FUN AT ALL. But I did come up with a really great go-to recipe with allergy-friendly foods that I ate every morning to feel like I had enough fuel in my body. Eventually I added dairy back in but this recipe can totally be done without dairy as well. Enjoy!
What you'll need:
Tortilla (I used the gluten free Siete brand tortilla)
Cheese (optional)
Chopped grilled chicken, ground turkey, or other meat (great for leftovers!)
Beans (I LOVE Siete brand charro beans!)
Toppings: Salsa, sour cream, guacamole, chopped black olives, etc.
I call this a squished burrito because the gluten free tortilla breaks easily when it's cold and using a panini press was the best method to avoid spilling the contents all over my kitchen - but you could totally do a burrito or quesadilla style in the pan.
Step 1: Load up the tortilla with optional cheese, meat, and beans.
Step 2: Heat up
Step 3: Add toppings!
