Who said coleslaw isn't healthy? It is actually one of my favorite dishes!
You will need thinly sliced cabbage, grated carrots, and finely chopped kale.
Mix together all the veggies with the following: vinegar (white, apple cider, or red wine), a little mayo or Greek yogurt, salt, pepper, and maybe a little celery salt.
This slaw is even better on day 2 after all the flavors have a chance to get to know each other.
You can also add chick peas to make it a meal!
